How to make

The jalapeños are washed and dried well, because a dry surface helps the coating cling better. Each pepper is cut lengthwise on one side or halved, depending on the preferred shape. The seeds and inner ribs are removed with a small spoon. For milder stuffed jalapeños, most of the ribs should be scraped out; for a hotter bite, a little may be left inside.

The filling is prepared by mixing the softened cream cheese with shredded cheddar, garlic powder, smoked paprika, salt and black pepper. The mixture should be creamy but thick enough to stay inside the peppers. Each jalapeño is filled generously, without overpacking, so the cheese does not spill out too much during frying.

Three shallow bowls are set up for breading. The flour goes into the first bowl, the eggs are beaten in the second, and the breadcrumbs are mixed with cornmeal in the third. Each stuffed jalapeño is rolled first in flour, then dipped in egg, and finally coated in the breadcrumb mixture. For a stronger golden crunch, the egg and breadcrumb step can be repeated once more.

The breaded jalapeños are placed on a tray and chilled for 15 minutes. This short rest firms the filling and helps the crust hold its shape when it meets the hot oil.

The oil is heated in a deep pan to 175°C (350°F). If there is no thermometer, a pinch of breadcrumbs should sizzle immediately but not burn. The jalapeños are fried in small batches for 2 to 3 minutes, turning gently, until the coating is crisp and golden. Crowding the pan should be avoided, as it lowers the oil temperature and makes the crust heavy instead of crunchy.

The fried stuffed jalapeños are lifted out with a slotted spoon and drained on paper towels for a minute. They are best served hot, while the cheese is soft and the crumb is crisp. Salsa verde, pickled jalapeño slices and fresh cilantro bring a bright, fresh contrast to the rich filling.

Leftovers can be cooled and stored in an airtight container in the refrigerator for up to 2 days. To bring back the crunch, they should be reheated in an oven or air fryer at 180°C (350°F) for 6 to 8 minutes rather than microwaved.
