How to make
The chicken is cut into medium-sized cubes to ensure even cooking and maximum flavor absorption. It is placed in a large bowl and lightly seasoned with salt and lemon juice to begin the marination process.
In a blender, fresh cilantro, mint, garlic, ginger, green chili, and yogurt are combined and blended until a smooth, vibrant green marinade is formed. This mixture is the key element of hariyali chicken tikka, giving it its signature fresh and herbaceous flavor.
The marinade is poured over the chicken, and spices such as cumin, coriander, garam masala, and black pepper are added. The mixture is thoroughly combined so that every piece of chicken is evenly coated.
The chicken is covered and left to marinate for at least 1 hour, but for best results, it is refrigerated overnight. This allows the herbs and spices to deeply infuse the meat.
The marinated chicken is threaded onto skewers, alternating with pieces of onion or bell pepper if desired for added flavor and texture.
The skewers are cooked on a grill, grill pan, or in an oven preheated to 200°C (400°F). The chicken is cooked for about 15-20 minutes, turning occasionally, until it is fully cooked and slightly charred on the edges.
During cooking, a light brushing of oil can be applied to keep the chicken moist and enhance the grilled finish.
Once done, the skewers are removed and allowed to rest briefly before serving.
Serve hot with mint chutney, lemon wedges, and flatbread or rice. Perfect as appetizer or main dish. Store in fridge up to 2 days.
