The chicken pieces are first washed and thoroughly dried with paper towels, which helps achieve a golden, crispy skin during baking. They are then seasoned evenly with salt and black pepper on all sides.
In a large oven-safe dish, the chicken is arranged in a single layer. Olive oil is drizzled over the top, and the chicken is rubbed lightly to ensure even coating. Minced garlic is scattered over the chicken to infuse flavor during cooking.
Fresh orange juice is squeezed from one orange and poured evenly over the chicken. The second orange is sliced into rounds and placed between and on top of the chicken pieces, adding both flavor and visual appeal.
The oven is preheated to 180°C (350°F). The chicken is baked uncovered for about 30 minutes, allowing it to start browning and developing flavor.
Meanwhile, a creamy sauce is prepared by gently heating butter in a small pan, then adding chicken broth and heavy cream. The mixture is stirred until smooth and slightly thickened.
After the initial baking, the dish is removed from the oven, and the creamy sauce is poured over the chicken. Capers are sprinkled evenly across the dish, adding a slightly tangy and salty contrast to the sweet citrus flavor.
The chicken is returned to the oven and baked for another 25-30 minutes, until fully cooked and the sauce becomes rich and slightly thickened. During this time, the chicken absorbs the flavors of the orange, cream, and capers.
Once cooked, the dish is removed from the oven and allowed to rest briefly. Fresh parsley is sprinkled on top before serving for added freshness and color.
Serve the chicken hot with rice, mashed potatoes, or fresh bread to soak up the creamy sauce. Store leftovers in the refrigerator for up to 3 days. Reheat gently to maintain the creamy texture.
