How to make
Begin by preparing the choux pastry dough. In a saucepan, combine the water, butter, and a pinch of salt. Heat over medium heat until the butter melts completely and the mixture begins to gently boil. At this point, add the flour all at once and stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides of the pan. This step is essential for creating the structure of classic French eclairs.
Remove the dough from the heat and allow it to cool for about 5-10 minutes. This prevents the eggs from cooking when added. Add the eggs one at a time, mixing thoroughly after each addition until the dough becomes smooth, glossy, and slightly sticky. The final texture should be thick but pipeable.
Transfer the dough into a piping bag fitted with a plain tip. Pipe elongated strips onto a baking tray lined with parchment paper, leaving space between each éclair for expansion.
Bake in a preheated oven at 180°C (350°F) for 25-30 minutes. Do not open the oven during baking, as this can cause the eclairs to collapse. Once baked, they should be golden, puffed, and hollow inside. Allow them to cool completely before filling.
To prepare the cream, heat the milk in a saucepan until warm but not boiling. In a separate bowl, whisk the egg yolks with sugar until pale and creamy, then add the flour and mix until smooth. Gradually pour in the warm milk while whisking continuously to prevent curdling.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens into a smooth custard. Add the vanilla extract and butter, mix well, and let the cream cool completely.
Fill the cooled eclairs by slicing them or piping the cream inside through small holes at the bottom. Make sure they are generously filled for the best texture and flavor.
For the chocolate glaze, heat the cream until hot, then pour it over the chopped dark chocolate. Stir until smooth and glossy. Dip or drizzle the glaze over the filled eclairs.
Allow the glaze to set slightly before serving. Serve chilled for best taste and texture. Store in the refrigerator for up to 2 days in an airtight container.
