How to make
The chocolate is broken into small pieces and placed in a heatproof bowl together with the butter. The mixture is gently melted over a water bath or in short intervals in the microwave, stirring until smooth and glossy.
In a separate bowl, the eggs and sugar are whisked until light and slightly fluffy. The melted chocolate mixture is slowly added while stirring continuously to prevent the eggs from curdling. Vanilla extract and a pinch of salt are added for flavor.
Flour is sifted into the mixture and gently folded in until a smooth batter forms. The batter is poured into greased ramekins or muffin molds, filling them about three-quarters full.
The cakes are baked in a preheated oven at 200°C / 400°F for about 8-10 minutes. The edges should be set, while the center remains soft and molten. After baking, the cakes are left to rest briefly for 1-2 minutes, then carefully turned out onto plates.
They are served warm, optionally with a scoop of ice cream on the side and lightly dusted with cocoa powder.
Serve immediately while warm so the center stays molten. Best enjoyed fresh, but the batter can be prepared in advance and refrigerated before baking.
