The cauliflower is first cut into small florets and placed in lightly salted boiling water, where it is cooked for about 8-10 minutes until just tender, then drained and set aside. The asparagus is trimmed and lightly blanched for 3-4 minutes or quickly sautéed in a pan with a little olive oil until bright green and slightly crisp.
The fish fillets are patted dry with kitchen paper, then seasoned evenly with salt and black pepper. A pan or grill pan is heated over medium-high heat, and olive oil is added.
The red snapper is placed skin-side down and cooked without moving for about 4-5 minutes until the skin becomes crispy and golden. The fillets are then carefully turned and cooked for another 2-3 minutes until fully done but still juicy.
In a small saucepan, butter is melted gently, and finely chopped garlic is added and cooked briefly until fragrant. Lemon juice and a pinch of saffron are added, and the sauce is stirred until smooth and slightly infused with flavor.
The vegetables are arranged on a plate, the grilled fish is placed on top, and everything is generously drizzled with the warm butter sauce.
Serve immediately while warm with extra lemon wedges or a light salad. Store leftovers in the refrigerator for up to 2 days in an airtight container. Reheat gently to avoid drying out the fish.
