How to make

In a large mixing bowl combine the rye flour, white flour, and salt. Cut the cold butter into small cubes and add it to the flour mixture.

Using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs. This step is essential for creating a flaky, rustic crust. Gradually add the cold water, mixing gently until a soft dough begins to form.

Bring the dough together into a ball without overworking it. Wrap it in plastic wrap and place it in the refrigerator for about 30 minutes to chill and relax.

While the dough is chilling, prepare the filling. Finely chop the onion and slice the mushrooms into thin pieces.

Heat the olive oil in a skillet over medium heat. Add the onion and sauté it for several minutes until soft and lightly golden. Add the mushrooms and cook them for several minutes until their moisture evaporates and they begin to brown slightly.

Stir in the finely chopped garlic, thyme, salt, and black pepper. Cook for another minute until fragrant, then remove the mixture from the heat and allow it to cool slightly.

Preheat the oven to 190°C (375°F).

Roll the chilled dough directly on a sheet of parchment paper into a circle about 30 cm (12 inches) in diameter.

Spread the ricotta cheese evenly in the center of the dough, leaving a border of about 4-5 cm (2 inches) around the edges. Distribute the sautéed mushroom and onion mixture over the ricotta.

Fold the outer edges of the dough inward over the filling to create the classic rustic galette shape.

Brush the folded edges with the beaten egg to help them turn beautifully golden during baking.

Transfer the galette with the parchment paper onto a baking tray and bake for about 35 minutes, until the crust becomes crisp and golden.

The mushroom and ricotta galette is best served slightly warm, garnished with fresh herbs such as thyme or sage. It works perfectly for lunch or dinner, especially when paired with a fresh green salad.

Leftovers can be stored in the refrigerator for up to two days and reheated in the oven to restore the crust's crisp texture.

Mushroom Ricotta Galette Tips

Use very cold butter

Cold butter helps create a flaky, crisp crust, which is essential for a good galette.

Don't skip chilling the dough

Chilling the dough allows the gluten to relax and makes it easier to roll out.

Cook the mushrooms properly

Allow the mushrooms to release their moisture and brown slightly so the galette filling does not become watery.

Leave space around the edges

The border ensures the dough folds properly and keeps the filling inside.

Serve slightly warm

Galettes taste best when slightly warm because the ricotta stays creamy and the crust remains crisp.
