How to make
Preheat the oven to 180°C (356°F). Prepare a loaf pan or cake mold by lining it with baking paper or lightly greasing it with oil or butter. This prevents the cake from sticking and helps it release easily after baking.
In a large mixing bowl, beat the eggs together with the sugar and brown sugar. Use a hand mixer or whisk and continue mixing for several minutes until the mixture becomes pale, fluffy, and slightly thicker. This step helps incorporate air into the batter, which will make the cake soft and tender.
Add the vegetable oil and vanilla extract to the egg mixture and mix until fully combined. Next, add the pumpkin puree made from cooked and blended pumpkin. Stir well until the mixture becomes smooth, aromatic, and evenly blended.
In another bowl, combine the flour, baking powder, salt, cinnamon, ginger, and nutmeg. These dry ingredients form the spice base that gives the cake its warm autumn flavor.
Gradually add the dry mixture to the pumpkin batter while stirring gently with a spatula or wooden spoon. Mix only until the ingredients are incorporated and the batter becomes thick and uniform.
Add the raisins and most of the pecan nuts to the batter. Fold them in carefully so they are evenly distributed throughout the mixture without overmixing.
Pour the batter into the prepared cake pan and spread it evenly. Sprinkle the remaining pecans on top to decorate the cake and add extra crunch.
Bake the cake for about 45-50 minutes until the surface becomes golden brown. To check if the cake is done, insert a toothpick into the center. If it comes out clean or with just a few crumbs, the cake is ready.
After baking, allow the cake to cool slightly in the pan before removing it. Transfer it to a rack and let it cool completely before slicing.
The pumpkin cake can be served slightly warm or at room temperature. It pairs wonderfully with a cup of coffee, tea, or hot chocolate.
For extra sweetness, it can be dusted with powdered sugar or served with a layer of cream cheese frosting.
Store the cake in an airtight container for up to 3 days at room temperature or up to 5 days in the refrigerator.
