Ingredients

  • for the white layer
  • heavy cream - 350 ml (11.8 fl oz)
  • milk - 150 ml (5.1 fl oz)
  • white chocolate - 120 g (4.2 oz)
  • granulated sugar - 40 g (1.4 oz)
  • gelatin - 8 g (0.28 oz)
  • liquid vanilla - 1 tsp

  • dark chocolate - 120 g (4.2 oz)
  • heavy cream - 150 ml (5.1 fl oz)
  • gelatin - 4 g (0.14 oz)

How to make

Begin by preparing the white panna cotta layer. Place the gelatin for the white layer in a small bowl and add a few tablespoons of cold water. Let it sit for about 5-10 minutes until the gelatin absorbs the water, softens and blooms.

In a saucepan combine the heavy cream, milk and sugar. Place the pan over low heat and warm the mixture gently while stirring until the sugar dissolves completely. The mixture should be hot but must not boil.

Chop the white chocolate into small pieces and add it to the warm cream mixture. Stir continuously until the chocolate melts completely and forms a smooth, creamy mixture.

Remove the saucepan from the heat and add the bloomed gelatin. Stir well until the gelatin dissolves fully. Add the liquid vanilla and mix again.

Pour the mixture evenly into dessert glasses or small bowls. Allow it to cool slightly at room temperature before placing the glasses in the refrigerator.

Chill for about 2 hours or until the white layer becomes firm and fully set.

Next prepare the chocolate layer. Place the gelatin for the chocolate layer in a small bowl with a little cold water and allow it to bloom for several minutes.

In a small saucepan heat the heavy cream gently over low heat without allowing it to boil.

Chop the dark chocolate into small pieces and add it to the hot cream. Stir continuously until the chocolate melts and forms a smooth chocolate cream.

Remove the saucepan from the heat and add the bloomed gelatin. Stir thoroughly until the gelatin dissolves completely.

Allow the chocolate mixture to cool slightly so it remains liquid but no longer hot.

Once the white layer has fully set, carefully pour the chocolate mixture over it in each glass.

Return the desserts to the refrigerator and chill for another 1-2 hours until the panna cotta becomes completely firm.

Before serving, the chocolate panna cotta can be decorated with chocolate shavings or finely grated chocolate.
