How to make
To prepare this homemade chocolate with puffed rice, begin by melting the chocolate and butter. Place them in a heatproof bowl over a pot of gently simmering water (double boiler method) or melt them slowly over very low heat. Stir continuously until the mixture becomes completely smooth and glossy.
Once the chocolate and butter are fully melted, add the honey, peanut butter (or tahini), liquid vanilla and a pinch of salt. Stir the mixture thoroughly until everything becomes smooth and evenly combined.
Remove the bowl from the heat.
Add the puffed rice to the chocolate mixture and gently fold it in using a spatula. Stir carefully so the puffed rice becomes evenly coated with chocolate without crushing the grains.
Line a square baking dish approximately 20 x 20 cm (8 x 8 inches) with parchment paper.
Pour the chocolate mixture into the prepared pan and spread it evenly using a spatula. Smooth the surface so the mixture forms an even layer.
Place the pan in the refrigerator and allow the chocolate to chill until fully firm and set.
Once the chocolate has hardened completely, remove it from the pan and cut it into bars or square pieces.
For the best crunchy texture use well dried puffed rice. Puffed rice (also known as expanded rice) is commonly available in health food stores.
If you prefer a softer and creamier chocolate texture, you can add an additional 1 tbsp of peanut butter or a small amount of cream to the melted chocolate mixture.
These types of chocolate puffed rice bars became popular in the second half of the twentieth century as a homemade and industrial alternative to nougat - crunchy, simple to prepare and requiring no baking.
