Sponge cake squares with lots of cream is a light dessert made with soft sponge layers, rich vanilla custard and whipped cream. Perfect for coffee breaks and family desserts.

Ingredients

  • for the sponge cake layer
  • eggs - 4
  • sugar - 120 g (4.2 oz)
  • flour - 120 g (4.2 oz)
  • baking powder - 1/2 tsp
  • vanilla extract - 1 tsp
  • for the custard cream
  • milk - 1 liter (33.8 fl oz)
  • eggs - 4
  • sugar - 200 g (7 oz)
  • cornstarch - 80 g (2.8 oz)
  • butter - 100 g (3.5 oz)
  • vanilla extract - 1 tsp
  • for the whipped cream layer
  • heavy cream - 250 ml (8.5 fl oz)
  • powdered sugar - 2 tbsp
  • for dusting

How to make

Start by preparing the sponge cake base. In a large bowl beat the eggs and sugar with a mixer for about 5 to 6 minutes until the mixture becomes pale, thick and fluffy. Add the vanilla extract and mix briefly.

Sift the flour together with the baking powder. Gradually fold the dry ingredients into the egg mixture using a spatula. Mix gently so the batter keeps its airy texture.

Pour the batter into a baking tray lined with parchment paper and spread it evenly. Bake in a preheated oven at 180°C (356°F) for about 15 to 18 minutes until the sponge becomes lightly golden.

Remove the sponge cake from the oven and allow it to cool completely. Once cooled, slice it horizontally to create two thin sponge layers.

Next prepare the custard cream. In a saucepan heat about 800 ml (27 fl oz) of the milk until it begins to warm.

In a bowl whisk the eggs with the sugar and cornstarch until smooth. Add the remaining milk and mix again.

Gradually pour the egg mixture into the warm milk while stirring continuously. Cook the cream over medium heat while stirring until it thickens and becomes smooth.

Once the custard has thickened remove it from the heat and add the butter and vanilla extract. Stir until the butter melts completely and the cream becomes silky. Allow the custard to cool.

Place the first sponge cake layer into a baking dish. Pour the entire custard cream over the sponge layer and smooth the surface evenly. Allow the cream to cool and begin to set.

In a separate bowl whip the heavy cream with the powdered sugar until a fluffy whipped cream forms. Spread the whipped cream evenly over the cooled custard layer.

Place the second sponge cake layer on top and gently press it down.

Dust the top generously with powdered sugar.

Refrigerate the cake for at least 4 hours so the layers set properly and the dessert becomes firm enough to slice.

Serve the sponge cake well chilled, cut into square pieces. This creamy dessert pairs perfectly with coffee or tea.
