How to make
Start by preparing the pizza dough. Pour the lukewarm water into a bowl and add the dry yeast together with the sugar. Stir gently and allow the mixture to sit for about 5 to 10 minutes until the yeast activates and begins to foam slightly.
Add the olive oil and salt to the mixture. In a large bowl sift the flour and gradually add the yeast mixture while mixing. Begin kneading until a soft dough forms.
Transfer the dough onto a work surface and knead it for about 8 to 10 minutes until it becomes smooth and elastic. Shape the dough into a ball, lightly coat it with olive oil and place it in a bowl. Cover the bowl and allow the dough to rise for about 1 hour until it doubles in size.
Once the dough has risen, transfer it onto a lightly floured surface and shape it into a round pizza base. Place the base onto a baking tray lined with parchment paper.
Spread the pizza tomato sauce evenly across the surface of the dough. Sprinkle half of the grated mozzarella cheese over the sauce.
Arrange the sliced mushrooms, chopped red bell pepper, sliced red onion and bacon evenly across the pizza. Sprinkle the remaining mozzarella cheese on top.
Bake the pizza in a preheated oven at 240 to 250°C (465 to 480°F) for about 10 minutes until the crust begins to turn golden and the cheese starts melting.
Carefully remove the pizza from the oven and crack the eggs directly on top of the pizza.
Return the pizza to the oven and bake for another 3 to 5 minutes until the egg whites set while the yolks remain slightly runny.
Once baked, sprinkle the pizza with oregano, freshly ground black pepper and drizzle a few drops of olive oil on top.
Serve the Aussie pizza hot immediately after baking. It works perfectly for lunch or dinner and pairs well with a fresh green salad.
