To prepare the classic German currywurst, begin with the sauce. In a small saucepan combine the ketchup and tomato paste. Add the water, vinegar and sugar, then stir the mixture well until all ingredients are evenly blended.
Place the saucepan over low heat. Once the sauce begins to warm, add the paprika and half of the curry powder. Stir continuously so the spices dissolve into the sauce and release their aroma. Place the bockwurst sausages in the pan and cook them on all sides until they develop a golden, slightly crispy exterior. This usually takes several minutes and gives the sausages a deep, savory flavor.
Once the sausages are cooked through, remove them from the heat and slice them into bite-sized pieces. Traditionally the pieces are cut into thick rounds so they absorb the curry sauce well.
Arrange the sliced sausages on a serving plate and pour the warm curry tomato sauce generously over them. Finish by sprinkling the remaining curry powder on top to give the dish its characteristic flavor and aroma.
