How to make

Begin by preparing the sponge base. Place the eggs and sugar in a mixing bowl and beat them with a mixer until the mixture becomes light, pale, and fluffy. The volume should increase significantly, creating a soft sponge texture. Add the liquid vanilla and mix briefly to combine.

In a separate bowl sift the flour together with the baking powder. Gradually fold the flour mixture into the egg mixture using a spatula. Mix gently to keep the batter airy and prevent the mixture from losing volume.

Line a baking tray with parchment paper. Spoon small portions of the batter onto the tray, forming round discs about 5 cm (2 inches) in diameter. Leave space between them because they will expand slightly during baking.

Bake the sponge bases in a preheated oven at 180°C (355°F) for about 8 to 10 minutes, until the edges turn lightly golden. Remove them from the oven and allow them to cool completely.

Meanwhile prepare the orange layer. Place the gelatin in a small bowl with the water and leave it for several minutes until it absorbs the liquid and becomes soft.

Warm the orange marmalade gently over low heat until it becomes slightly fluid. Add the softened gelatin and stir well until it dissolves completely and the mixture becomes smooth. Allow the mixture to cool slightly until it begins to thicken.

Place a small spoonful of the orange mixture on top of each sponge base and spread it evenly to cover the surface.

Transfer the cookies to the refrigerator for about 30 minutes so the orange layer can set properly.

Melt the dark chocolate using a double boiler or gently in the microwave in short intervals, stirring frequently until smooth.

Dip each cookie into the melted chocolate or spoon the chocolate over the orange layer so that it is fully covered.

Place the finished Jaffa cakes on a tray and allow them to sit in a cool place until the chocolate hardens completely.

These homemade Jaffa cakes combine a soft sponge base, a bright orange layer, and a smooth chocolate coating. They are perfect with coffee or tea.

Jaffa Cakes Tips

Whip the eggs well

Properly whipped eggs create a light and airy sponge base.

Sift the flour

Sifting prevents lumps and keeps the sponge texture delicate.

Do not overmix the batter

Gentle folding keeps the sponge fluffy and prevents it from becoming dense.

Let the orange layer cool slightly

The marmalade mixture should thicken slightly before spreading to prevent it from running.

Chill before coating with chocolate

Cooling the cookies helps the orange layer stay stable during the chocolate coating.

Use good quality dark chocolate

High quality chocolate gives the best flavor and a smooth glossy finish.

Allow chocolate to set naturally

Let the chocolate harden at room temperature or in a cool place for the best texture.
