How to make
Begin by preparing the apple filling. Wash the apples thoroughly and peel them. Using a coarse grater, grate the apples so they form a soft mixture suitable for the pastry filling.
Place the grated apples in a large bowl. Add the sugar, cinnamon, crushed walnuts and vanilla. Mix everything well until the ingredients are evenly combined and the apples become aromatic with the spices.
Allow the mixture to rest for about 20 minutes. This helps the apples release their natural juices and the flavors blend together.
Prepare a round baking tray and lightly grease it with a little melted butter.
Open the package of phyllo pastry sheets and place them on the work surface. Take two sheets at a time and brush them lightly with melted butter.
Sprinkle about 2-3 tablespoons of the apple filling evenly across the pastry sheets.
Roll the pastry tightly into a log and place it in the baking tray.
Repeat the same process with the remaining pastry sheets and apple filling until everything is used.
Arrange the rolls next to each other in the baking tray.
Brush the top of the pastry with the remaining melted butter so it bakes into a golden crispy crust.
Bake the apple pastry in a preheated oven at 170°C (338°F) for about 40-45 minutes until it becomes beautifully golden.
Once baked, allow the pastry to cool slightly. If desired, dust the top with powdered sugar before serving.
