How to make

Begin by activating the yeast. Dissolve the yeast in the lukewarm milk together with the sugar and let it sit for about 5-10 minutes until it becomes foamy. This step ensures the yeast is active and will help the dough rise properly.

In a large mixing bowl sift the flour and add the salt. Pour in the activated yeast mixture, the egg and the oil or melted butter. Start mixing the ingredients together until a soft dough begins to form.

Transfer the dough onto a lightly floured surface and knead it for several minutes until it becomes smooth and elastic. Place the dough in a bowl, cover it with a towel and leave it in a warm place to rise for about 30-40 minutes, or until it doubles in size.

Once the dough has risen, place it on a lightly floured surface and roll it into a large rectangle.

Prepare the filling by cutting the ham or sausage into small pieces. Grate the mozzarella or cheddar cheese if it is not already grated. Dice the red bell pepper and finely chop the green onions or spinach.

Spread the ham evenly across the dough, followed by the grated cheese, chopped peppers and green onions or spinach. Sprinkle the filling with black pepper, oregano and a small pinch of savory herb to enhance the flavor.

Carefully roll the dough into a tight log starting from the long side. Pinch the ends of the roll so the filling stays inside during baking.

Place the savory strudel on a baking tray lined with parchment paper. Brush the surface with beaten egg to give it a shiny golden crust while baking.

Bake the strudel in a preheated oven at 180°C (356°F) for about 30 minutes, until the crust becomes beautifully golden.

Remove the strudel from the oven and allow it to cool slightly before slicing so the filling can set.

Ham and Cheese Strudel Tips

Activate the yeast properly

Make sure the milk is lukewarm, not hot, so the yeast can activate correctly.

Knead the dough well

Proper kneading helps develop gluten, resulting in a softer and more elastic dough.

Let the dough rise in a warm place

A warm environment helps the yeast work efficiently and allows the dough to double in size.

Do not overfill the strudel

Adding too much filling can make rolling difficult and may cause the strudel to open during baking.

Seal the edges well

Pinch the ends firmly so the filling remains inside the dough.

Brush the top with egg

Egg wash creates a shiny golden crust and improves the final appearance.

Let the strudel rest before slicing

Allowing it to cool slightly helps the filling settle and prevents the slices from falling apart.
