Ingredients

  • sweet potatoes - 1 kg (2.2 lb)
  • cheddar cheese - 200 g (7.05 oz) grated
  • eggs - 4
  • cooking cream - 300 ml (10.1 fl oz)
  • milk - 100 ml (3.4 fl oz)
  • garlic - 2 cloves
  • butter - 40 g (1.4 oz)
  • fresh rosemary - 2 - 3 sprigs (or 1 tsp dried rosemary)
  • salt - to taste
  • black pepper - to taste

How to make

Peel the sweet potatoes and slice them into thin rounds.

In a bowl beat the eggs with the cream and milk. Season the mixture with salt and black pepper.

Grease a baking dish with butter and rub it lightly with garlic. Arrange a layer of sweet potatoes, sprinkle with some cheddar cheese and a little rosemary, then pour over part of the egg and cream mixture.

Repeat the layers in the same way. The final layer should be sweet potatoes generously topped with cheddar cheese. Add small pieces of butter on top.

Bake the sweet potato gratin in a preheated oven at 180 °C (356 °F) for about 45 minutes until the sweet potatoes become tender and the surface turns golden and aromatic.
