How to make

The ingredients are enough for 12 thin sponge layers with a diameter of 20 cm (8 inches). When making the cake at home, many people prepare only 6 layers and reduce the ingredients by half, but the authentic Hungarian Dobos cake traditionally has between 8 and 12 layers.

Separate the eggs for the sponge layers into yolks and whites.

Beat the egg yolks with half of the sugar until a thick and pale cream forms. In a separate bowl beat the egg whites with the pinch of salt, gradually adding the remaining sugar until a glossy and firm meringue forms.

Gently fold the whipped egg whites into the yolk mixture using slow folding motions. Add the vanilla and the sifted flour and mix carefully until a light and airy batter forms.

Draw a circle with a diameter of 20 cm (8 inches) on parchment paper or use a cake ring of the same size. Spread a thin layer of batter (about 2-3 mm) and smooth it evenly.

Bake each layer separately in a preheated oven at 180°C (350°F) for about 5-6 minutes, until the layer remains light in color and slightly elastic. Repeat until 12 thin layers are baked and allow them to cool completely.

For the buttercream, beat the eggs and powdered sugar over a double boiler until the mixture thickens and reaches about 70°C (158°F). Remove from heat and allow it to cool to room temperature.

Melt the dark chocolate over a double boiler and allow it to cool slightly.

Beat the softened butter until fluffy. Gradually add the egg mixture, melted chocolate, cocoa powder, and vanilla while beating until a smooth, rich, and stable chocolate buttercream forms.

Assemble the Dobos cake by spreading a thin and even layer of cream between each sponge layer. Reserve one layer for the caramel top. Frost the sides and top of the cake with the remaining buttercream and smooth evenly.

To prepare the caramel topping, heat the sugar, water, and lemon juice over medium heat until a deep amber caramel forms. Quickly spread the hot caramel over the reserved sponge layer and immediately cut it into triangular slices before the caramel hardens. Arrange the caramel pieces on top of the cake.

Recipe FAQ

What is Dobos cake?

Dobos cake (Dobos torte) is a traditional Hungarian layered sponge cake filled with chocolate buttercream and topped with a thin layer of hard caramel.

What makes Dobos cake unique?

Its signature feature is the shiny caramel layer on top, which adds crunch and helps protect the cake from drying out.

How many layers does a traditional Dobos cake have?

Classic versions usually contain about six thin sponge layers with five layers of chocolate buttercream.

Why was the caramel topping invented?

The caramel glaze helped the cake stay fresh longer in a time when refrigeration was limited.

Is Dobos cake difficult to make?

Yes, it is considered a moderately advanced dessert because it requires baking several thin sponge layers and preparing caramel topping.

How is Dobos cake traditionally decorated?

The sides are often covered with ground nuts such as hazelnuts, walnuts, or almonds for extra flavor and texture.

How long does Dobos cake keep fresh?

Because of the buttercream and caramel top, it can stay fresh for several days when stored properly in the refrigerator.

Did the original recipe remain secret?

Yes. József Dobos kept the recipe secret for years and only released it to the pastry guild when he retired in 1906.

Is Dobos cake popular outside Hungary?

Yes. After its debut, the cake spread across Europe and became one of Hungary’s most famous desserts.

At the time, refrigeration was rare, and Dobos designed the cake with a caramel topping that helped preserve freshness and protected the delicate buttercream layers. This clever innovation helped the cake become famous across Europe.

The cake quickly became a sensation among the aristocracy of the Austro-Hungarian Empire. Even Emperor Franz Joseph and Empress Elisabeth were said to be fans of the dessert.

What makes Dobos cake unique is its many thin sponge layers combined with rich chocolate buttercream and a crisp caramel top. Unlike many modern cakes, the classic version contains no syrup, no baking powder, and no soaking, relying entirely on technique and balance of textures.

Today Dobos Torte remains a signature dessert in Hungarian cafés and pastry shops and is considered one of the most elegant layered cakes in European pastry tradition.
