How to make
The oven is preheated to 180°C / 350°F. The bacon is cut into small pieces and fried in a dry pan until golden and crispy, then transferred onto paper towels to drain excess fat.
In a large bowl the eggs are beaten. The milk, melted butter, flour, salt, black pepper and sugar (if used) are added and mixed until a smooth batter forms.
The drained corn, grated cheese and half of the bacon are added to the mixture. If desired, a little crumbled white cheese can also be included for extra flavor.
The mixture is stirred well and poured into a buttered baking dish.
The pudding is baked for about 40-45 minutes, until it sets and the top becomes golden. After baking, the remaining bacon and finely chopped green onions are sprinkled over the top.
The corn pudding is allowed to rest for 10 minutes before slicing.
It is served warm as a side dish with roasted meats, barbecue, or chicken. It also works wonderfully for brunch or a light dinner served with a fresh salad.
