How to make
Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
In a bowl, combine the spelt flour, baking soda, baking powder, and spices.
In a separate bowl, beat the eggs with the brown sugar and a pinch of salt until well combined.
Gradually add the vegetable oil and the grated carrots, mixing continuously.
Add the dry ingredients in batches, stirring gently until incorporated.
Fold in the raisins and chopped nuts.
Divide the batter evenly among the muffin liners.
Optionally, add a small piece of dark chocolate to some of the muffins and sprinkle others with extra nuts.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
The spelt carrot muffins are ready to enjoy.
