How to make
In a blender, combine the watermelon, coconut milk, lime juice, and honey. Blend until smooth.
Finely chop a few mint leaves and add to the mixture. If desired, you can also add small slices of kiwi, strawberries, or blueberries to the molds for additional flavor and color.
Divide the mixture into popsicle molds (or cups) and insert wooden sticks.
Freeze the watermelon popsicles for at least 4-5 hours, and preferably overnight.
To make it easier to remove the popsicles with the stick, dip the mold in warm water for a few seconds.
