How to make
Cut the watermelon and puree it. Strain through a fine sieve or cheesecloth to get a clear juice - about 500 ml.
In a small bowl, put the gelatin and add 3 tbsp. cold water. Stir and let it swell for about 5-10 minutes.
In a saucepan, heat the watermelon juice with the sugar and lemon juice, but do not let it boil - just let it become warm.
Add the swollen gelatin to the warm watermelon juice and stir until it is completely dissolved.
Distribute the mixture into small silicone molds, cups or bowls. Let the watermelon jelly cool and put it in the refrigerator for at least 4 hours until it sets.
Carefully remove the watermelon jelly from the molds and decorate it with mint leaves, fresh fruit or pieces of fresh watermelon.
