How to make
Start by preparing the basmati rice. Rinse the rice thoroughly under cold running water until the water runs clear. This removes excess starch and helps the grains remain separate during cooking.
Place the rice in a pot with the appropriate amount of water according to the instructions on the package.
Add a teaspoon of oil, a pinch of salt, turmeric, cloves and the cinnamon stick to the cooking water. These spices infuse the rice with warm aromatic flavors as it cooks.
Cook the rice until the grains become tender and fluffy.
Towards the end of the cooking process add the saffron so that it releases its distinctive color and fragrance into the rice.
While the rice is cooking, prepare the garlic. Finely chop the garlic cloves.
Heat the remaining oil in a frying pan over medium heat and sauté the garlic briefly until it becomes fragrant but not browned.
Once the rice is fully cooked, transfer it to the pan with the garlic.
Gently stir the rice for a short time so it absorbs the garlic aroma and becomes evenly coated with the oil.
Remove the whole spices such as the cloves, cinnamon stick and cardamom pods.
Taste the rice and adjust the seasoning with additional salt if necessary.
Serve this simple and fragrant Kashmiri rice warm.
For extra flavor and texture the rice can be topped with crushed roasted nuts or dried fruits.
This aromatic rice can be served as a side dish with curries or enjoyed on its own as a light appetizer.
