How to make
Dissolve the yeast and 1 tbsp. of the sugar in the milk, which is slightly warmed to body temperature. Mix well and cover with a towel for 7-8 minutes to activate.
Sift the flour with a flour sieve into a bowl and make a well into which you can pour the lightly beaten eggs with the remaining sugar, salt and activated yeast.
Knead a soft dough, by adding flour a little at a time, until it stops sticking to your fingers. From kneading, the dough will slowly gain elasticity, so do not overdo it with flour, so that it does not become too hard.
Place it in the bowl, which is lightly greased, cover it with a towel and leave it to rise for 1 hour or until it has tripled in size.
Roll out the risen dough on a floured surface into a thin, round crust. Cut it into 12 triangles.
Place a piece of goat cheese and a spoonful of jam in the wide part of each triangle. Roll them up into rolls and arrange them on a greased or parchment paper lined baking tray, by leaving space between each roll. Spread them with a yolk beaten with a little water and sprinkle them with sesame seeds.
Bake in an oven heated to 390°F (200°C), until they acquire a nice golden brown color.
