Ingredients

  • olive oil - 2/3 cup (150 ml)
  • eggs - 1 pc.
  • lemon juice - 2 - 3 tbsp. freshly squeezed
  • himalayan salt - 1/2 level top tsp. by taste
  • balsamic vinegar - 1 tsp. white
  • baby arugula - a few leaves

How to make

Pour olive oil into a tall specialized liquidizer bowl or glass jar.

It is of great importance for the color, taste and aroma that the egg is fresh! Add it to the olive oil, season with as much Himalayan salt as you like, pour the freshly squeezed lemon juice and white balsamic salad dressing / balsamic vinegar.

Dip the liquidizer into the bowl and blend for 20-30 seconds, until the desired consistency is obtained. It is very important to blend with a pulling motion from the bottom up!

Serve the homemade mayonnaise in a clay bowl or sauce dish.

Garnish the homemade mayonnaise with olive oil with baby arugula leaves!
