Wash the black trumpet mushrooms thoroughly as they often have sticks or leaves stuck to them.
Strain them perfectly or absorb the moisture with kitchen paper.
Heat the butter in a pan and saute the black mushrooms along with the sliced garlic.
Cut the cleaned and washed baby lettuces into quarters.
Arrange them in a circle and place thinly sliced sping onions on them.
Place the thin triangular slices of manchego cheese around the fresh vegetables and pour the aromatic mushrooms in the center.
Drizzle generously with good olive oil, balsamic vinegar and sprinkle the special green salad with salt.
