Ingredients

  • bread - 5.3 oz (150 g) dry, from the day before
  • mint - 2 stalks (fresh)
  • olive oil - 3 1/3 tbsp (50 ml) extra virgin
  • vinegar - 1 2/3 tbsp (25 ml)
  • garlic - 2 cloves (large)
  • water - 3 cups (700 ml)
  • ice - 1 cup (200 g) small cubes
  • salt - 2 level top tbsp. or by taste

How to make

To make this gazpacho, you will need a powerful appliance such as a blender, food processor or Nutri bullet. You can also use a blender, but in this case the bread should be soaked in water beforehand and the ice should be excluded from the recipe or added at the end as cubes to each portion.

Separate only the mint leaves and peel the garlic cloves, cut them in half lengthwise and remove the spicy core (sprout).

Put the bread (preferably without the crust), ice, olive oil, vinegar, salt, garlic, mint leaves and water in the jug of your appliance.

Initially run it at medium speed and then progressively increase to maximum for 4 minutes.

Pour the finished fresh gazpacho into cups or bowls and decorate it with mint leaves.

Serve it cold!
