How to make
Start by preparing the potatoes. Peel them and wash them thoroughly under running water to remove any dirt or excess starch from the surface.
Cut the potatoes into evenly sized sticks approximately 1 x 1 cm thick. Keeping the pieces uniform in size helps them cook evenly and develop the same golden texture.
Place the sliced potatoes in a bowl filled with cold water and leave them to soak for about 10-15 minutes. This step removes part of the starch and prevents the fries from sticking together during frying.
After soaking, drain the potatoes and dry them very well using kitchen paper or a clean towel. Removing moisture is very important because water can cause hot oil to splatter and can also prevent the fries from becoming crispy.
Heat a large amount of oil in a deep frying pan or deep fryer to about 160°C (320°F).
Add a small batch of potatoes to the hot oil so the temperature of the oil does not drop too much. Fry them for about 4-8 minutes until they become pale golden but not fully browned.
Remove the fries and place them on paper towels to drain excess oil. Allow them to rest for about 30 minutes. This resting period helps the potatoes develop a better interior texture.
Before serving, heat the oil again to about 190°C (374°F). Return the fries to the hot oil for a second quick fry of about 2 minutes until they become deeply golden and very crispy.
Remove the finished fries and place them on paper towels again to remove excess oil.
Season the fries immediately with salt while they are still hot.
Serve the crispy French fries right away while they are hot and crunchy.
